South West Hummus
Think hummus is boring? I did too until a made this one! This is the hummus recipe for people who don't like hummus. Try it for yourself and let us know if it converts you into a hummus lover.

This smooth hummus is nothing like its store bought counterparts. Flavoured with our South West rub, it is the perfect accompaniment for drinks and nibbles, salads and even as a flavoursome condiment with meat dishes. It is so easy to make and you will be seriously impressed with the result.
Ingredients

400g canned chickpeas (1 can) - drain and reserve liquid

¼ cup liquid from the canned chickpeas

¼ cup freshly squeezed lemon juice

½ cup tahini, hulled⅓ cup extra virgin olive oil

3 tablespoons Coast n Smoke South West rub - more or less to taste
Garnish

pinch of South West, drizzle of olive oil
Directions
Drain the chickpeas, ensuring you reserve the liquid from the tin.
OPTIONAL for extra smooth hummus. Place the chickpeas in a large bowl and fill with cold water. Rub the chickpeas between your hands in the water, this will cause the skins to rub off. Skim the skins from the water and discard, then drain water from chickpeas. This step is not necessary, but it does give an extra smooth end product.
Place chickpeas, lemon juice, olive oil, reserved liquid and tahini in a food processor or blender, and blitz until it is a smooth paste.
Add the South West rub until you are happy with the flavour, mixing as you go. You can blitz in the blender or mix with a spatula.
You can adjust the thickness by adding more reserved liquid if you prefer a slightly thinner consistency.
Serve in a shallow bowl, drizzle with olive oil and a small sprinkle of South West, or paprika if you prefer. Enjoy
