Do you love crispy skin chicken wings? I do, and this is my favourite recipe for creating perfectly crisp skin every time!

The crispiest, tastiest cajun spiced chicken wings you ever did see! These delightful bite sized wing nibbles are the perfect snack or main meal when accompanied by some sides.
For a snack, serve with a delicious dipping sauce. We love buffalo sauce or spicy mayo (try Mama Melissa hot sauce and Kewpie mayo) or even a blue cheese style dipping sauce....yummmmmmm!!
For a main meal, serve with a range of salads, spiced rice, cous cous or stir fried vegetables.
Ingredients

1Kg Chicken wing nibbles or full chicken wings

1 Tbsp Baking soda (NOT bicarbonate of soda)

2-3 Tbsp Winki-POP Dust
Directions
Preheat the oven or your BBQ to 120-150C
Pat the wings/nibbles dry
Tip the chicken into a bowl
Add the baking soda and Winkipop Dust to the chicken and mix, mix, mix til the chicken is thoroughly and evenly coated. TIP: If you are heading out for a BBQ or picnic do this step in a ziplock bag and take with you in your esky
Place the wings on a wire rack in the oven or BBQ (I often do these on the Weber Q for an easy dinner) skin side up.
Bake at this low temp for approximately 30 minutes to render the fat out of the wings, this is important to make them deliciously crispy.
Increase the temperature of the oven or BBQ to 200-220C and cook for a further 40-50 minutes. Check on the wings to ensure they are cooking evenly.
Remove from the oven/bbq and serve with either a dipping sauce or sides
