Brazilian style Bahia chicken stew
A fragrant and creamy coconut based casserole with lots of Brazilian spice and flavour. Once you've made this once it will be added to your high rotation meals in no time....it's just that good.

This deliciously fragrant casserole will have you going back for seconds. It is a Brazilian spiced coconut stew made here with chicken but equally delicious with prawns, white flesh fish or beef. Serve it with rice for a full meal. If you don't make this more than once we will be very surprised :) Enjoy!
Ingredients

500g chicken breast (tenderloins or thigh), cubed

3 Tbsp lime juice

3 garlic cloves, finely chopped or crushed

1 large red chilli, sliced (optional)

3 Tbsp coconut oil

4 spring onions, sliced

1 brown onion, cut into wedges

1 red capsicum, sliced finely

3 Tbsp Bahia Barrels seasoning from Coast n Smoke

3 tomatoes, deseeded and chopped

400mL coconut milk (or 200mL coconut milk and 200mL coconut cream)

salt, to taste

2 Tbsp coriander, chopped (optional garnish)

1-2 spring onions, chopped (optional garnish)

Steamed rice, to serve
Directions
Place the chicken in a bowl. Add 2 Tbsp lime juice, 1 tsp salt and the garlic. Mix and chill for 1 hour if time permits.
Prepare the other ingredients so they are ready to add.
In a large saucepan, heat the coconut oil. Add brown onion and cook until wedges are separate.
Add the chicken and all the marinade, then add the rest of the Bahia Barrels seasoning. Mix and cook until the chicken has browned and the spices are fragrant.
Add the capsicum, tomato, spring onion, chilli and mix through. Pour in the coconut milk (and cream if using), stir.
Bring to the simmer and reduce for 10 minutes.
Adjust the sauce to taste with salt, lime juice or reducing further.
Serve with steamed rice and garnish with coriander and/or spring onion if desired.
