WinkiPOP Dust Cauliflower Cheese Steaks
These tasty cheesy cauliflower steaks might convert you from carnivore to herbivore they are just that good! A burst of Cajun flavour from WinkiPop Dust melts seamlessly into the gooey cheese and crunchy parmesan crumb. Its sheer cauliflower perfection.

A brilliant starter, side dish or standalone snack....this cheesy cauliflower steak will become one of your signature dishes. A nice bite cheddar gives it a great flavour, we have used Red Leicester cheese for the awesome colour but also the great taste. Red Leicester would have to be one of my favourite cheeses, it's salty and with just enough bite to give this dish a real lift.
Ingredients

1 large head of cauliflower

4 tsp extra virgin olive oil

75g grated Red Leicester cheese

1 Tbsp WinkiPOP Dust

2 Tbsp finely grated parmesan

2 Tbsp panko breadcrumbs

1 Tbsp extra virgin olive oil

2 tsp finely chopped flat-leaf parsley
Parmesan Crumb
Directions
Preheat the oven to 240C (220C fan forced)
Line baking tray with baking paper
Slice the cauliflower to create 2 large steaks approx. 2-3cm thick
Place the cauliflower on the baking tray and drizzle each steak with 1 tsp of oil.
Sprinkle the WinkiPOP Dust evenly over the cauliflower steak, turn each one over and repeat on the other side.
Place the cauliflower in the over and leave to cook for 15 minutes.
While the cauliflower is cooking, prepare the parmesan crumb. Heat oil in a small pan then add the breadcrumbs and parmesan and mix to combine. Cook the breadcrumb mixture until golden, transfer to a bowl and allow to cool before adding the parsley and mixing.
Turn the cauliflower over and cook for another 10 minutes.
Remove the cauliflower from the oven, and turn the temperature down to 200C (180C fan forced). Cover the cauliflower in the Red Leicester cheese and return to the over for about 5 minutes or until the cheese is melted.
Remove from the oven and serve. if you are using this as the main focus of your dish serving alongside a leafy green salad would be ideal. If using as a side, keep the rest of the dish simple as this has a lot of flavour.
Recipe Note
Cheese - We use Red Leicester as it has a great colour but also has the perfect balance for this recipe. You can use other types of cheese such as cheddar, gruyere etc but the cheese needs to have a good flavour so try to make it something aged or a stronger cheddar.
Breadcrumbs - I love to use panko but you can use whatever you have at home.
Cauliflower- you will have some leftover cauliflower once you cut the steaks from the middle, keep this for another nights dinner.
