Homemade Sausage Rolls
When we have a bit of time up our sleeve, especially on a rainy day, homemade sausage rolls are always winner for a snack or dinner in our house. We like to season ours with Surf,Paddle, Grill (SPG) and sprinkle with Bancoora Bagel Seasoning. We have also used Winki-POP and Drop in Jerk to season the filling and both were delicious!

Delicious sausage rolls for the footy, party finger food or an afternoon snack.
Ingredients
- 
½ tbsp olive oil 
- 
1 brown onion, finely chopped 
- 
150g streaky bacon, finely shopped 
- 
500g pork mince (can use 1:1 pork:beef (not lean) if preferred) 
- 
40g breadcrumbs (panko) 
- 
1 egg 
- 
            
1 tsp Surf, Paddle, Grill (SPG) (use less or more to taste) 
Baking
- 
3 sheets puff pastry cut in half (you will end up needing 2.5-3 sheets depending on how much filling you use) 
- 
1 egg, whisked 
- 
            
Bancoora Bagel Seasoning, to finish 
Directions
- Chop the streaky bacon (we need the fat content so make sure you use streaky) and onion really finely. 
- Heat oil in a frying pan and add onion and bacon and sautee for 2 minutes. 
- Add the Surf, Paddle, Grill (or Coast n Smoke seasoning of your choice) and sautee for another minute or two. Don’t brown the bacon or onion. 
- Transfer the bacon and onion mix to a large bowl and allow to cool for 10-15 minutes. 
- Add the rest of the filling ingredients and mix well. It’s easiest to get your hands dirty here and get them in the mix! 
- Lay a sheet of pastry out, brush one long edge with egg 
- Form a line of filling along the middle of the pastry, make sure the filling is tightly formed without gaps. 
- Roll the pastry over the filling and seal with seam side down. 
- Repeat till all filling is used. 
- Refrigerate for 30 mins 
- Preheat oven to 180C 
- Cut the sausage rolls into 4 pieces. 
- Brush with egg and sprinkle with Bancoora Bagel Seasoning 
- Place on a baking tray (lined with baking paper) and bake for 30-35 minutes. Turn trays half way through. 
- Once cooked remove from the oven and allow to cool slightly before serving. NOTE: the filling may still look pink due to the bacon 
- Serve with a delicious chutney or ketchup and enjoy.
