500g Beef Mince
2 Tbsp South West
1 Tbsp Olive Oil

1 large bag of corn chips
2 cups grated Cheese
1 cup black beans (optional)
1 Tomato diced
1 avocado diced
Jalapeños to serve (optional)
Sour cream to serve
Fresh coriander to serve (Optional)
Lime wedges to serve (optional)

225g Mexican Cheese, grated TIP: can use any grated cheese but Cheddar, Colby and Monterey jack are recommended
1 Tbsp cornflour
375g can of evaporated milk
1-2 tsp South West (season to taste)
Directions

Heat olive oil in a large frying pan over medium-high heat. Add onion and cook until softened.
Add beef mince and sprinkle over the South West.
Cook until mince is browned.

Toss the grated cheese in the cornflour.
Add evaporated milk, cheese, and South West seasoning. Stir.
Keep stirring until the cheese melts and the sauce becomes silky.
Taste the sauce and check if it requires further seasoning.
For the nachos you don’t want the sauce to be too thick, so it may be necessary to add a bit more milk (any is fine) at this stage.

Spread the corn chips over the base of an alfoil or oven tray.
Sprinkle some of the cheese, maybe around ⅓ of it, over the corn chips.
Top with the South West beef then queso (if using).
Sprinkle with the remaining cheese
Bake at 200C for 5-10 minutes or until cheese is melted and bubbling.
Top with diced tomato, avocado, jalapeños sour cream and fresh coriander. Serve with a lime wedge.
